Food Adventures: Pasta with Mascarpone and Roasted Cherry Tomatoes

I am not particularly skilled in the kitchen.
I mean, I can bake (cupcakes) and make a really good spinach dip, but I hate trying recipes for actual meals. Being in the kitchen is all about trial and error, and I don't like erring. I'm a perfectionist, and wasting time and money and being forced to eat something that doesn't come out correctly the first time makes me sad.

But. I'm trying to get over that.

The great thing about being unemployed (hey, I'm trying to look at the bright side here) is, well, all of my free time. I've been spending a lot of this said free time on Pinterest, pinning pretty things and recipes, mostly. Even though I spend more time staring at food photos than actually cooking, I've decided to try my hand at making a few things.

So here's the first one: Pasta with Mascarpone and Roasted Cherry Tomatoes.

It was super easy (yay!) and came out really good. The mascarpone is rich and creamy, and I've never tried it in a pasta before, but I loved it (and so did mom and dad). And okay, I forgot to bake it for the additional 15 minutes, but whatever. Still tasted good, I promise.

Next on my to-try list: Baked Avocado Fries. You read that correctly. Ohhh yes.
